

Puerco en salsa verde
(Pork in Green tomatillo sauce)​​
Serves 4 people
Ingredients:

-1 Lb pork (3/4) and ribs (1/4)
-3 cups of Salsa Verde
-2 pcs potato
-1 garlic clove
-2 tsp olive oil
-Salt and Pepper to taste

-Refried Beans
-Mexican rice
-Corn tortillas
-Serrano pepper (optional)

-Chicken in salsa verde

Optionally remove some of the fat if it has too much, but a Little fat is needed for extra flavor

Chop the pork and ribs in "bite size" pieces, about 1" squares. If you have long bone ribs, you can leave them like that

In a bowl, season with sal, pepper and garlic. Mix. Have a zip of your drink!!

Add some oil in a hot pan or pot and sear just for 20/30 secunds flip and repeat.

Once seared on both sides, add the Green Sauce (see our récipe)and cook for 10 min

After the 10 minutes, lower the heat to médium, add the potatoes (chopped same size) and cook for 20 more minutes or until the potato is coocked
