

Empanadas

Serves 4 people
Ingredients:
-1 lb Corn Flour
-1 oz Wheat flour
-1/2 lb Manchego cheese
-4 oz Cooked or can mushroom
-Salt
-Oil to Deep fry
Serve with
-Fried tomato sauce
-Pikled chopped cabbage
-Habanero sauce

Good for breakfast

Mix the corn flour (maseca), the wheat flour (all porpouse) and salt in a container

Add wáter little by little and mix by hand... knead

This is how it shoul look like. if it is dry and breaking apart, add more wáter; if it sticks to your hand, you added too much wáter, add more corn flour.

Prepare little balls the size of a golf ball

With a tortilla press, place first a piece of plastic bag, then 1 masa ball, another piece of plastic and then press it down

Notice the edges are nice and smooth, if breaking then the masa is too dry

Fill up with the cheese and a couple pieces of mushroom on the center of the tortilla. Make sure you leave enough space around the edges so you can seal it properly.

Fold and seal all around the edge being very carefully not to break the masa

Deep fry med/hi on both sides until golden brown
