Mexican White Rice
(Arroz Blanco Mexicano)​​
Serves 4 people
Ingredients:
-1 cup White rice.
- 1/3 Onion.
- 2 Garlic cloves.
- 1/3 cup water.
- 2 cups of Chicken broth (hot).
- 1/4 Chopped carrot.
- 1/4 Peas
- 1/4 Corn kernel.
- 1 piece Serrano pepper
- Vegetable oil
- Salt & pepper.

Ok, even though everybody knows the popular RED Mexican rice, there are a couple more diferent versions of it. This is a white version of Mexican or spanish rice wich goes along with a lot of different dishes.

First thing to do is wash the rice and then let it strain for a little while until it´s almost dry.

To season the rice, we´ll blend the onion, garlic and the 1/3 cup of water.

Heat up your pan or pot at high heat and add some vegetable or olive oil, wait until the oil heats up too; to make sure the oil is hot enough, put 1 or 2 pieces of dry rice and if it dances, then it´s ready. Keep stiring.

Once the rice starts getting golden or a couple of brown ones, add the blendded onion and garlic mix and stir.

It will take less than a minute to absorb the mix.

Add salt & pepper to the HOT chicken broth and add it to the rice.

Add the vegetables and spread them but DO NOT MIX THE RICE! : )

Make a hole to the Serrano pepper with a toothpick and put it on top or the rice just for extra flavore

¡¡¡¡IMPORTANT PART!!!!​

As soon as it starts bubbling, LOWER the heat to low, put the lid on and cook for 15 minutes (DO NOT UNCOVER).

After that time,, check just in one spot to make sure there is no liquid left, if there is no more liquid,

Turn the heat off and let it cool down for 10 minutes BEFORE STIRING!!

Uncover and leave it again for 5 more minutes and THEEEEN stir.


And that´s it, you have a Mexican white rice wich goes with anything you want, stews, meat, beans, sea food, etc.
